Ingredients

Gather these fresh ingredients before you start cooking. Quality ingredients make all the difference. If an ingredient has no measurement, the amount is up to your discretion.

  • For the Dressing:
    • 2 tbsp shrimp paste (hae ko)
    • 1 tbsp tamarind paste (mixed with a little water)
    • 1-2 tbsp sugar
    • 1/2 tsp chili paste.
  • For the Salad:
    • 1 cucumber (sliced)
    • 1/2 pineapple (cubed)
    • 1 jicama (cubed)
    • 1 green mango (cubed)
    • 1 green apple (cubed)
    • fried dough fritters (you tiao) cut into pieces
    • roasted peanuts (crushed).

Method

Follow each stage deliberately. Technique and timing shape the final texture, aroma and depth of flavour.

  1. Prepare the Dressing: In a large bowl, mix the shrimp paste, tamarind juice, sugar, and chili paste until well combined. The dressing should be thick and sticky.
  2. Prepare the Fruits and Vegetables: Wash, peel, and cut all the fruits and vegetables into bite-sized pieces.
  3. Combine: Add all the cut fruits, vegetables, and fried dough fritters to the bowl with the dressing.
  4. Toss: Gently toss everything together until all the ingredients are well-coated with the dressing.
  5. Garnish and Serve: Transfer to a serving plate and sprinkle generously with crushed roasted peanuts. Serve immediately.
