Ingredients

Gather these fresh ingredients before you start cooking. Quality ingredients make all the difference. If an ingredient has no measurement, the amount is up to your discretion.

  • 300g yellow noodles
  • 100g prawns (shelled)
  • 100g firm tofu (cubed and fried)
  • 1 potato (boiled and cubed)
  • 2 cloves garlic (chopped)
  • 1 shallot (sliced)
  • 1 tbsp chili paste
  • 1 tbsp tomato ketchup
  • 1 tbsp soy sauce
  • 1 egg
  • 1 cup bean sprouts
  • a handful of choy sum (chopped).

Method

Follow each stage deliberately. Technique and timing shape the final texture, aroma and depth of flavour.

  1. Prepare Noodles: If using fresh yellow noodles, rinse them in hot water.
  2. Sauté Aromatics: Heat oil in a wok. Sauté the garlic and shallots until fragrant. Add the chili paste and cook for a minute.
  3. Add Protein: Add the prawns and cook until they turn pink. Add the fried tofu and boiled potato cubes.
  4. Add Sauces and Noodles: Stir in the tomato ketchup and soy sauce. Add the yellow noodles and stir-fry, making sure the noodles are well-coated with the sauce.
  5. Add Egg and Vegetables: Push the noodles to one side of the wok. Crack an egg in the empty space and scramble it. Mix the scrambled egg with the noodles. Add the choy sum and bean sprouts and stir-fry for another minute until the vegetables are slightly wilted.
  6. Serve: Serve hot, often with a wedge of lime on the side.
